You Need This Stuff

  • 2 large flour tortillas
  • 4 eggs
  • 1/4 cup black beans, cooked
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin powder
  • 1 tablespoon olive oil
  • 1/2 cup shredded cheese
  • 2 tablespoons sour cream
  • 2 tablespoons salsa

  1. Heat olive oil in a large skillet over medium heat
  2. Add diced onion, bell pepper, garlic powder, chili powder, and cumin powder to the skillet and cook until vegetables are softened, about 5 minutes
  3. Push vegetables to one side of the skillet and crack eggs into the other side
  4. Scramble eggs until cooked through
  5. Add black beans to the skillet and stir to combine
  6. Place one tortilla on a plate and top with half of the egg and vegetable mixture
  7. Sprinkle with half of the shredded cheese
  8. Fold the tortilla in half and place in a skillet over medium heat
  9. Cook until the tortilla is lightly browned and cheese is melted, about 2 minutes per side
  10. Repeat with remaining tortilla, egg and vegetable mixture, and cheese
  11. Serve burritos with sour cream and salsa.
