Beti’s Reflections

Today, I’m excited to share a recipe for a delicious breakfast dish that combines French and Japanese influences. This dish is a personal favorite of mine, and it reminds me of a wonderful trip I took to Paris a few years ago.

During my travels in Paris, I stumbled upon a cozy little café that served the most amazing French toast. The bread was perfectly toasted, the egg mixture was sweet and aromatic, and the berries were so fresh and flavorful. I was in love! I savored every bite of that French toast, and it quickly became one of my favorite breakfast dishes.

Fast forward to today, and I’m thrilled to share my own take on this classic recipe. This French toast is a unique fusion of flavors, thanks to the addition of Japanese ingredients like cinnamon and vanilla extract. It’s the perfect breakfast for a lazy weekend morning or a special occasion brunch.

To make this French toast, start by pre-heating your oven to 350°F (175°C). Whisk together the eggs, sugar, vanilla extract, cinnamon, and salt in a shallow bowl. Dip each slice of bread into the egg mixture, making sure to coat both sides evenly.

Heat a large skillet over medium heat and melt the butter. Place the slices of bread in the skillet and cook for 23 minutes on each side until golden brown. Transfer the French toast to a baking sheet lined with parchment paper and bake in the preheated oven for 10 minutes or until cooked through.

While the French toast is baking, prepare the fresh berries by washing them and slicing them into small pieces if desired. To serve, place two slices of French toast on each plate and top with maple syrup, fresh berries, and an egg cooked to your preference (scrambled or fried). It’s that easy!

This dish is versatile and can be modified to accommodate different dietary needs. You can use whole wheat bread for a healthier version or gluten-free bread if you are gluten intolerant. Vegan egg substitutes can also be used if you prefer a plant-based option.

I hope you enjoy making this delicious French and Japanese-inspired dish. Whether you’re enjoying it at home or reminiscing about a past travel experience, it’s sure to be a crowd-pleaser. Don’t forget to pair it with your favorite cup of coffee or tea or a mimosa or glass of champagne for a truly indulgent breakfast experience.

Bon appétit!
