I recently had the pleasure of trying Filipino-style Leche Flan Delight during my trip to the Philippines. The dessert was served at a family gathering, and I was immediately enchanted by its creamy and sweet flavor. I was so impressed that I knew I had to learn how to make it myself.
After a few attempts, I finally mastered the recipe and I’m excited to share it with you. This dessert is surprisingly easy to make and requires only a few simple ingredients. To start, preheat your oven to 350°F (175°C) and grease a 9-inch round baking pan with butter.
In a medium saucepan, melt 2 cups of sugar over medium heat until it turns into a golden brown caramel. Pour the caramel into the greased baking pan and spread it evenly. In a large bowl, whisk together 6 large eggs, 2 cans of condensed milk, 1 can of evaporated milk, 2 teaspoons of vanilla extract, and 2 tablespoons of melted butter until well combined.
Next, pour the egg mixture into the baking pan over the caramel layer and cover with aluminum foil. Place the baking pan in a larger roasting pan filled with 1 inch of hot water. This is called a bain-marie, and it ensures the dessert cooks evenly. Bake in the preheated oven for 45 minutes or until set when lightly shaken.
Remove the dessert from the oven and let it cool completely before refrigerating it for at least 4 hours or overnight. This will allow it to set properly before serving.
