Beti’s Reflections

I had been exploring the flavors of Brazilian cuisine for months and was on the hunt for the perfect Brazilian breakfast. After a bit of research, I happened across a recipe for Brazilian Breakfast Bliss. It was love at first sight!

I gathered the ingredients and got to work. A tantalizing aroma of garlic, cumin, and oregano filled my kitchen as I cooked the rice and black beans with olive oil and spices. To get started, heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is hot, add 2 cups of white rice and stir to coat with the oil. Next, add 1 can of black beans, 1/2 teaspoon cumin, 1/4 teaspoon garlic powder, 1/4 teaspoon paprika, 1/4 teaspoon oregano, and 2 tablespoons of chopped fresh parsley or cilantro leaves. Stir to combine and cook for 5 minutes, stirring occasionally.

I then added bacon and stirred everything together before dividing the mixture into two bowls. To finish, I topped each bowl with a fried egg and added some slices of avocado for garnish. The end result was stunning!

Taking my first bite, I was transported to the streets of Brazil. The combination of flavors was simply incredible! My search for the perfect Brazilian breakfast had finally come to an end – all thanks to this delicious recipe!
