  • 1/4 cup daikon radish, julienned
  • 1/4 cup carrot, julienned
  • 1 small cucumber, thinly sliced
  • 3 tbsp rice vinegar
  • 2 tbsp sugar
  • Pinch of salt

  2. In a medium pot, combine sushi rice with 125 cups of water and bring to a boil over high heat

  15. Fry battered vegetables in hot oil until golden brown; remove with slotted spoon onto paper towels to drain excess oil
  16. In a small skillet over high heat, toast each nori sheet for about 10 seconds on each side; cut into quarters
  17. Assemble bento box by placing sushi rice on one side of the box
  18. Top rice with nori sheets, julienned cucumber, julienned carrot, avocado slices, and sushi-grade salmon or tuna
  19. Arrange cooked chicken strips, tempura vegetables, and blanched vegetables on the other side of the box
